Others specialize in an “omni-roast,” creating a single roasting profile that functions beautifully for both methods. La Encantada is a rare glimpse into a prehistoric coffee landscape. Nestled at 1850m within a vast biological reserve, these ancestral trees grow on just a single hectare of land, completely surrounded by untouched forest. This washed lot is wonderfully complex and layered, offering a clean, sparkling acidity reminiscent of fresh pear and grapefruit. It’s beautifully balanced by the rich, comforting sweetness of milk chocolate and maple syrup, finished with a subtle tickle of brown spice. It’s a seasonal “treasure” that drinks like a walk through a high-altitude cloud forest.
