Option A: Colombia Monteblanco (250g)
Origin: Pitalito, Huila, Colombia
Farm: Finca Monteblanco
Producer: Rodrigo Sanchez Valencia
Altitude: 1,730 m
Variety: Caturra
Process: Washed, Watermelon Co-Fermentation
Notes: Watermelon, Honeydew, Raspberry
Recommended brew method: Filter
Finca Monteblanco, a family-run coffee farm in Pitalito, is managed by Rodrigo Sanchez Valencia and his wife Claudia Samboni. Located on and 18-hectare hillside, the farm features a wet mill and drying facilities at its peak with coffee plants on the slopes below. They focus on experimenting with coffee varieties and processing methods, measuring the sugar content of harvest cherries to determine the best processing approach. The coffee has undergone a unique fermentation method using a ‘mother culture’ made from tropical fruit nectar (watermelon, melon) blended with microorganisms like lactobacillus and saccharomyces cerevisiae.
The culture enhances the coffee’s sweetness and maintains high Brix levels. Coffee cherries are fermented with this culture for 190 hours, ensuring the Brix levels to remain above 6 and pH above 4. After fermentation, the coffee is dried for 2-3 days in sunlight and 15-18 days under shaded canopies. This unique fermentation process gives this coffee notes of refreshing watermelon, sweet honeydew melon and raspberries.
This coffee was first introduced in our line-up in early 2025, and immediately became popular for its unique flavor profile. We are excited to have this coffee back again – the fresh harvest – back on our line-up this year.

Today, Panama is known for their high-end coffees, including the renowned Gesha variety. However, not all coffee producers can thrive due to a lack of financial support and access to infrastructure. This is where Cuatro Caminos steps in. Founded in 2014, Cuatro Caminos is an organization which operates in Boquete, West Panama, currently with 45 coffee farmers. It uses a micro-funding model to support its long-term mission, which is to revitalize underperforming farms and to transform them into artisan specialty coffee producers.
A core mission of Cuatro Caminos is to make Boquete’s coffee industry sustainable. Beyond ensuring economic viability, the organization prioritizes environmental and social responsibility. It reserves up to 20% of net profits from farming operations – shared with investors – to fund infrastructure improvements such as electricity, running water, and gas. Additionally, Cuatro Caminos enhances working conditions by providing modern equipment, clothing, and other daily essentials to improve the lives of coffee farmers. The organization also goes beyond government-provided social services, seeking out remote farmers with strong coffee potential and leading them to success. Cuatro Caminos is a blend of skills, capital, human resources, and expertise, all dedicated to enhancing the quality of the final product. This commitment has helped propel Panama’s coffee industry onto the global stage.
This lot of natural process Gesha was harvested from Horqueta 1, a 9.3-hectare farm at 1,500 meters above sea level. Acquired in 2015 as raw land, it was developed from scratch with a diverse range of Arabica varietals, including Gesha, Typica, Pacamara, and later San Ramon in 2019. The farm features worker housing on site, and a satellite nursery supplying seedlings to the Horqueta region, using biodegradable pellets to promote sustainable cultivation. Additionally, a hydraulic ram system was implemented to provide a constant water supply from an on-site river for farmers and their families. The coffee has a sweet citrus notes of orange, tropical notes of pineapple, and floral like rose.
