Matcha is a type of green tea made by taking young tea leaves and grinding them into a bright green powder. The powder is then whisked with hot water. It is different from brewing regular green tea, where the leaves are removed after steeping for about 4 minutes.
Matcha, like other green teas, contains a class of antioxidants called catechins. Matcha is high in a catechin called EGCG (epigallocatechin gallate), which is believed to have cancer-fighting effects on the body. Studies have linked green tea to a variety of health benefits. This includes helping to prevent heart disease, type 2 diabetes and cancer, and even encouraging weight loss.
Wait, what is Houjicha then?
Houjicha or Hojicha actually refers to green tea that has been roasted. Hojicha is made by slowly roasting rolled dried tea leaves, stems, stalks, or twigs resulting in a loose leaf tea. Like matcha, hojicha can also be ground into a superfine powder that can be used in food and beverage preparation. Hojicha has a naturally sweet taste and smoky flavor with distinct notes of cocoa. Any bitterness typically found in green tea is removed from hojicha when the tea leaves are roasted at a high temperature.

Kiyosen is a well-established teahouse founded with a head office in Ujitawara-cho, Kyoto, the birthplace of green tea. Located right in the production area of Uji Tawara-cho, Wazuka-cho, Minamiyamashiro-cho, their teas are produced only at farmer’s fields who understand tea and its deep history. As a result, the production process can be constantly checked and managed, and the highest varieties of tea leaves can be secured.
Izumi San was born as the second son of a tea farmer’s family in Uji Tawara-cho, Kyoto, which has 200 years of history. He grew up watching and helping in the tea cultivation and production. In his thirties, he started focusing on a mail-order business that had been continued since 1955, and then established the Kiyosen Co. Ltd. when they were officially accredited as tea appraisers in 1997.
What makes our Matcha and Hojicha powder better?
Uji tea, which produces a slight sweetness and plump aroma, is grown on a slope in Ujiyama covered with morning mist. This is in an environment most suitable for high-quality tea growth, and has a long history in Uji Tea production. It is finished through the craftsmanship that has been cultivated through generations of masters and professionals.
Izumi San still live in Ujitawara-chō, where their main business is the sales and development of tea products. He is responsible for the whole process, from processing of picked tea leaves to storage , on a daily basis, by visiting the nearby tea plantations to see the growth status of tea leaves, with the first priority being “delivering the highest quality products”.
As masters of tea, Kiyosen is proud of their Uji tea products that are made with the motto “safe, secure, delicious” with the sincerity of making tea that meets the needs of customers . This is the “Kiyosen Brand” of Kyoto and Ujitawara.
Both our Pure Uji Matcha and Houjicha by Kiyosen Japan is packed in small 100g bags. Generally, both matcha and houjicha powder has a shelf life of approximately one year. It is best to enjoy them within a month of opening. This is because the exposure to air, smells, heat and humidity will quickly deteriorate the flavour and health benefits of the powder.
As such, we have decided to pack them in standard small 100 bags for this very reason so that you do not have too much opened at any point of time. Its higher cost to us, however we feel this adds a lot of value to our product and keeping them fresher, longer.
We recommend that you keep unopened and opened bags in the fridge to maintain the freshness of the matcha and hojicha. Once opened, seal bag after every use and aim to finish them soonest possible.
When matcha and hojicha is left opened and exposed to air and light, it can change from a vibrant green color to a dull yellow, and taste very dry, and bitter. For this very reason, we only pack them in small 100g bags to ensure you only have a small amount of powder opened at any point of time.
Matcha Latte: 5g of pure uji matcha with 8g of sugar, add a small amount of lukewarm water and whisk them in a small bowl to a thin paste. Pour in a cup and top up with 130g of frothed milk. Alternatively, pour the paste slowly while stirring into a cup of hot milk. Adjust according to preference.
Hojicha Latte: 3g of pure uji hojicha with 5g of sugar, add a small amount of lukewarm water and whisk them in a small bowl to a thin paste. Pour in a cup and top up with 130g of frothed milk.
