Exploring Global Roasting Styles & Wholesale Options

Different roasters practice unique roasting methodologies, skills, and preferences. Some choose to roast beans entirely differently for espresso versus filter brewing. Others specialize in an “omni-roast,” creating a single roasting profile that functions beautifully for both methods. If we feature a guest roaster who utilizes an omni-roast, the exact same single origin whole bean coffee may be available in both our espresso and filter boxes.

Option A: Peru Wilder Garcia

Origin: Jaen, Cajamarca, Peru
Farm: Estate Wilder Garcia
Producer: Wilder Garcia Bravo
Altitude: 1,750 – 1,950 m
Variety: Bourbon
Process: Washed
Notes: Hazelnut, Dates, Red Apple
Recommended brew method: Espresso

Wilder Garcia is a third-generation coffee producer from Jaén, Peru. He owns 23 hectares of land, 16 of which are dedicated to coffee production. The Garcia family has been cultivating coffee since 1970. Today, Wilder and his family are guided by a business vision that prioritizes social and environmental responsibility.

Wilder is renowned for producing a diverse range of varieties. From traditional varieties such as Typica and Catimor, as well as newer or rare varieties like Caturra, Pacamara, Gesha, Java and more. For all varieties, Wilder focuses on processing using conventional methods, but with an elevated edge such as adpoting new spacing systems and advanced pruning techniques (skeletal pruning) to increase yeilds for certain varieties.

The farm’s unique microclimate, combined with meticulously executed conventional processing methods, produces beans with exceptional flavor profiles. This lot of Bourbon was de-pulped, thoroughly washed to remove the mucilage, and then dried on raised beds for 10 to 18 days until the ideal moisture content was achieved. This resulted in a coffee with a clean, comforting notes of hazelnuts, sweet lingering notes of dried dates, and soft acidity of red apples.

Option B: Colombia Pasiflora

Origin: Huila, Colombia
Farm: La Reserva
Producer: Marlon Rojas Pérez
Altitude: 1,700 m
Variety: Bourbon Papayo
Process: Washed Passion Fruit Co-Fermentation
Notes: Passion Fruit, Mango, Eucalyptus
Recommended brew method: Espresso

CAFEGA is a green coffee importer based in Barcelona, Spain, focusing on collaborating with producers who are committed to environmental sustainability, and open to innovation and transparency. One of their partners is Marlon Rojas Pérez, and his farm La Reserva, located in Pitalito, Huila, Colombia. This coffee is marks the second lot by Marlon and CAFEGA in our collection.

Marlon’s lot is the first ever Bourbon Papayo in our coffee lineup. Bourbon Papayo (or simply, Papayo) is a native species in the Huila region of Colombia. Its history remains quite a mystery as little is known about the origin of this variety. What is memorable of Papayo though, is its versatility in adapting to different processing methods resulting in unique flavor profiles.

This Bourbon Papayo went through two stages of fermentation. First, an aerobic fermentation for 24 hours. Then, an anaerobic fermentation for 60 hours in barrels. During the fermentation stages, mosto (fruit musts) were added – Marlon used two fruits from the passion flowers (pasiflora) family: passion fruit and cholupa, a sweet and tangy fruit native to Colombia. The cherries were then dried on raised African beds for 15 days.

Through the extended co-fermentation process, this Bourbon Papayo has a unique tropical fruit notes of bright passion fruits and juicy mango, accompanied by calming aroma of eucalyptus.
