Australian Cane Sugar, *† Cocoa Powder (35%).

Allergens: May be present: milk, soy.

Origin

Cane Sugar from Queensland, Australia. Cocoa powder from the *† Tocache region, Peru (20%), *† Santo Domingo, Dominican Republic and/or * Kilombero Valley, Tanzania (80%).

Bean Type: Trinitario, Forastero.

Cocoa Flavors:
Peruvian cocoa: Stone fruit and honey.
Tanzanian cocoa: Bitter cocoa, date fruit flavours.
Dominican Republic cocoa: Hints of roasted nuts, vanilla and caramel.

Fermentation Style: Wooden box or Jute bags.
Drying Style: Open air on tarps and raised beds with solar dryers.

Espresso Instructions

In your milk pithcer, add 150g of fresh, cold milk and 20g of Koko Deluxe.

Steam it together with milk to 68deg C. This will blend the cocoa and thicken it up.

Garnish with freshly grated chocolate.

For Home Recipe

Make a smooth paste with a small amount of hot water and a tablespoon (roughly 18g) of Koko Deluxe.

Mix slowly with hot milk, stirring constantly as you add the milk to the paste.

Sprinkle some chocolate on top. Enjoy 🙂

About The Original Cocoa Traders

In late 2005, Gabe Davidson and two kiwi barista friends had a handful of tiny espresso bars dotted around Melbourne's cheapest, most unwanted city laneways. As their reputation for great coffee started to grow, their attention turned to the drinking chocolate on offer, and they soon realised that the products available were substandard: full of potato or corn starch, milk powders (used as cheap bulking agents) and numerous artificial flavours and colours mixed in.

They got their kiwi on and began experimenting to develop their own gluten-free, nut-free, dairy-free, high cocoa fat drinking chocolate - that at the time was close to revolutionary.

The Original Cocoa Traders was established and the deeply flavoursome drinking chocolate blends now known as Koko Deluxe, Mofo Deluxe and the new Mofo Deluxe Premium (cane sugar free) are sold in Australia, New York, London, Japan, Singapore and, of course, throughout Gabe's home country of New Zealand.
